百侯薄饼在大埔百侯等地已有200余年历史,为传统美食.相传清乾隆年间,大埔名闻遐迩的“一腹三翰林”之一的杨缵绪,官至陕西、西安按察司按察使.杨缵绪及其侍从家属从北方带回家乡四种美点──薄饼、绿豆粄、豆子羹、蕨粉粄.其中薄饼经过民间多年在仿制中改进、提高,演变成今天风味独特,广受欢迎的客家小吃──百侯薄饼.客家人的祖先来自中原北方,而百侯薄饼亦起源于中原北方,实在是一种巧合.此点式被称为“锦囊藏宝”.   
相传大埔县百侯镇的一个小山村里有一个贫困家庭小孩,至十多岁仍未出街入市.而百侯镇则逢农历三、六、九为墟日.其时,百侯镇只有一条窄窄的街道,全街不过百十余间一色两至三层的低矮店铺.店铺面前挂着凉棚布.墟日,赶墟的人群在这里摩肩接踵,显得热闹而嘈杂.当时,那穷苦小孩缠着大人要去赴墟.走至凉棚底下一个小吃摊,小吃摊里传出嘭……嘭……嘭打薄饼皮的声音,而一条条似手帕包裹、卷成筒状的薄饼散发着香味,让人好不口馋,小孩咂咂嘴巴吸引嚷着问大人:“手帕包着的是什么?”大人买不起,只得哄骗小孩:“手帕包着拉杂”.那小孩长大后事业有成,但孩提时的经历记忆犹新,于是写了一首诗,自嘲:
忆我髫龄未出巢,爷娘携带往街跑.
未知薄饼何堪味,笑问帕中何物包?
百侯薄饼的制作过程分为两部分:
一、制作薄饼皮
薄饼师傅必须在圆形木盆里把上等面粉加上少许盐水用力揉搓,将面粉和成面粉团,每次面粉用量1至2公斤为宜.揉搓至软韧粘结后,用手抓起面粉团,重重地摔在木盆里,发出嘭……嘭……嘭的响声.如此反反复进行百十次,让饼皮粘柔、软韧.然后抓起一团,快速地涂擦在生有熊熊炉火的专用平底铁镬上,叠成一块块圆形薄饼皮,饼皮薄如纸,透明晶亮.
二、制作馅料
馅料一般以靓肉丝、豆腐干、豆芽、鱿鱼、香菇、虾仁等为主料.将主料切好配好后选用适量食油下镬,加上蒜白,用潮汕产特级鱼露起镬炒香后将以上混合在一起的主料放入镬内炆至熟透后即包进叠有二至三张的饼皮内,捆实后外搽辣酱,洒上胡椒粉,放入盘中趁热端给顾客.
百侯薄饼皮韧馅香,口感柔软滑润,味美而不腻,风味独特.
现在,这种客家风味小吃不但在百侯,而在大埔县城等地的宾馆、酒楼、食府以至街头大排挡、道旁小食摊均有此小吃.不过,随着生活水平的提高和各种各样食品的增加,人们对小吃要求已有所不同,不少酒楼、宾馆现已将百侯薄饼“袖珍化”了,有的将一条薄饼切成二段而吃.不少离乡赤子,包括海外华侨、港澳台同胞回乡后都要品尝品尝此风味食品.
