Salmonella spp.were not detected on any of the uninoculated
produce used in our studies.The populations of Salmonella Typhimurium
on the surface of lettuce and tomatoes after inoculationwere 3.51–
3.99 log cfu/g and 3.47–4.86 log cfu/tomato,respectively.The efficacy
of treatment withmyrtle leaves oil on S.Typhimurium inoculated into
shredded iceberg lettuce and whole tomatoes are shown in Tables 1
and 2,respectively.Treatment with 500,750,1000 ppm of myrtle
leaves oil significantly reduced (pb0.05) the number of S.Typhimurium
on shredded lettuce and whole tomatoes compared with
populations on the produce treated with sterile distilled water.
Washing with water for up to 20 min reduced the populations of S.
Typhimurium on the surface of tomatoes and iceberg lettuce by 0.24
and 0.80 log cycles,respectively.Other researchers also showed that
treatment of fruits and vegetables with water results in a microbial
reduction of less than 1 logarithmic unit (Singh et al.,2002).S.Typhimurium
populations remaining after the treatments with myrtle
leaves oil with or without rinsing were not significantly different on
iceberg lettuce and tomato (pN0.05).This suggests that rinsing with
water had a limited effectiveness in reducing S.Typhimurium on produce.
Izumi (1999) obtained similar results thatwater rinse of carrot or
cucumber slices after electrolyzed water treatment did not effect the
microbial population.
Significant logarithmic reductions were achieved by dipping the
tomatoes and lettuce in a solution containing 500 ppm of essential oil
when compared with the sterile distilled water treatments (pb0.05).
The treatment of lettuce with 750 ppm myrtle leaves oil reduced
S.Typhimurium by 1.04 to 1.42 logarithmic units; however increased
concentrations of up to 1000 ppm did not result in an additional
significant logarithmic reduction on lettuce.There was no difference
between reductions of 500 ppm (0.39–0.90 log cfu/tomato) and
750 ppm (0.66–1.23 log cfu/tomato) concentrations on tomatoes,on
the other hand increase in concentration to 1000 ppm resulted in a
significant reduction of 0.89 to 1.89 logarithmic unit on tomatoes
(pb0.05).Myrtle leaves oil concentrations were selected as they had
previously been shown to have antibacterial activity against the same
culture in vitro conditions (Gündüz,2008).
Treatments with 500 or 750 ppm myrtle leaves oil for 5,10,15 or
20 min do not produce an adverse effect on sensory quality.However,
treatments of lettuce with 1000 ppmmyrtle leaves oil for 15 or 20 min
lead to visible discoloration along the cut edge of the lettuce leaf and
also disrupt the crunchy texture of lettuce.As there was no significant
difference between treatment times,the treatment of lettuce for 5 or
10 min with 1000 ppm myrtle leaves oil could be useful to eliminate
