摘要:本文以野玫瑰花瓣为实验材料,通过对浸提剂种类、浸提剂浓度、浸提温度、浸提时间、料液比这几个因子的单因素实验,同时,通过对野玫瑰花花朵原料和浸提次数的选择,得到了野玫瑰色素的最佳提取条件,即采用除去苞片的粉碎的野玫瑰花花瓣,以0.1mol/L盐酸-95%乙醇(1mol/L盐酸用95%乙醇定容至1L)为浸提剂,在60℃温度下,浸提1小时.
提取的野玫瑰色素从耐热性,氧化还原性,pH,金属离子,食品添加剂等影响因素对色素稳定性的影响等进行了比较实验,同时对野玫瑰色素的理化性质(光谱特性)进行了分析.实验结果表明:在520nm处色素具有最大的吸收峰,色素在60℃温度下相对稳定;最佳pH为;,食品添加剂食盐蔗糖对色素的稳定性基本没有影响;大多数金属离子对色素稳定性无不良影响;Fe2+、Fe3+可引起色素变色.
对提取的野玫瑰色素进行了成分的初步鉴定.采用考马斯亮蓝G-250法测定了蛋白质的含量及苯酚-硫酸法测定玫瑰色素的总糖含量,结果表明提取的色素的蛋白质含量为5.68%;总糖含量为1.09%.

Abstract: The paper is about a research on the wild rose pigments. Using wild rose petals as the experimental material, several single factor experiments in extraction solvent type, extraction concentration, extraction temperature, extraction time, solid to liquid ratio are made. At the same time, through the choice of raw materials of the wild rose flowers and extraction times, the best extraction conditions for Wild Rose pigment is being certified. That is, using crushing wild rose petal whose bracts are removed in extraction solvent with 0.1mol / L hydrochloric acid -95% ethanol (1mol / L hydrochloric acid with 95 % ethanol, final volume 1L) , temperature at 60 ℃, and extraction for 1 hour.
Comparative experiments are conducted on the extracted wild rose pigment about influencing factors like the heat, REDOX, pH, metal ions and food additives,which may leave impacts on the stability of the pigment. In addition, physical and chemical properties of the wild rose pigment (spectral characteristics) were analysed. The results show that: the pigment in the 520nm possesses the maximum absorption peak; is relatively stable in temperature of 60 ℃; the best pH is;, food additives, salt, sucrose did not affect the basic stability of the pigment; most of the metal ions had no adverse effects on the stability of the pigment ; Fe2 +, Fe3 + can cause pigment discoloration.
Initial identification was done on the extracted wild rose about the components. Coomassie brilliant blue G-250 was used to determine the protein content and phenol - sulfuric acid method for the total sugar content of the rose pigment. The results showed that the protein content of the extracted pigment was 5.68% and total sugar content 1.09%. Finally, the pigments' color value and antioxidant capacity were determined. The results showed that: the pigments' color value was1.163 and the rose pigments' POV rate of antioxidant is: 16meq/kg
