释,以便外国客人不仅明白菜名的表面意思,而且对
其中所包含的历史人物、典故、传说与该菜肴的关系
有所了解,加深他们对中国饮食文化的形象认识.
例如,福建驰名中外的传统名菜“佛跳墙”,名字
就很有特色,但也很难让人理解.其实“佛跳墙”的得
名还有一则故事.据说当年有几位秀才燕集聚春园,
名厨郑春发便把早先学做的一坛菜端出来, 请秀才
们品尝.坛盖一开,满坛荤香,秀才们闻之陶醉,尝之

津津有味,无不拍手称奇,于是便趁兴吟诗作赋,其
中有“坛启荤香飘四邻,佛闻弃禅跳墙来.”大家齐声
叫好,遂命此菜名为“佛跳墙”[8].“佛跳墙”应译为:
Buddha Jumping over the Wall — There is a story
about the name of “Buddha Jumping over the Wall”.
It is said that in ancient times several scholars gathered
together in Juchunyuan Restaurant,Zhengchunfa
took out a kind of creation contained in a jar which
he had prepared before and invited them to savor it.
When the cap of the jar was taken off and immediately
the room was filled with the wonderful smell, the
scholars were intoxicated with the smell and tasted it
with great interest. No one could help himself from
clap-ping his hands praising its uniqueness. They improvised
poems in high spirits. One verse of the poems
was “The flavorful scents are flowing around the
neighborhood after the cap is taken off. Buddha smelled
the food and got so excited that he abandoned his
temple and jumped over the wall”. After hearing this,
everyone present cheered it together. So they quoted
the poem and named the dish “Buddha Jumping over
the Wall”.

式红烧肉Chairman Mao’s Stewed Pork with Soy
Sauce、宋嫂鱼羹Sister Song’s Fish Potage,等等

餐饮文化.如“包子”Baozi(Steamed Stuffed Bun ) 、
______“馒头”Mantou (Steamed Bun/Bread ) .可以说随着国
际交流的进一步发展, 有些音译的中餐菜名或传统
中国食品名已被外宾广泛地了解和接受, 甚至进入
了英语词典.如Ma-Po Tofu(麻婆豆腐) 、Jiaozi(饺
子) 、Tofu (豆腐)、Chowmein (炒饭) 等等.翻译时可
直接使用这类词语.适当的时候也可以加注或采用
类比的方法对其加以形象的说明,因为这些“音译外
来词”毕竟还不为所有的来华外宾所了解[9].尤其中
国特有的一些传统食品如元宵丸、粽子、糍粑、春卷、
年糕等等在英语中没有对应词, 音译加注不失为填
补这类词汇空缺的好办法.相信随着跨文化交流更
加频繁、更加深入的发展,这类中餐译名会更好的传
达展现中国饮食文化.
